Peanut Butter Bars!

Was looking for a good dessert recipe today and found this. My husband and I just made these for the first time tonight!! OMG they are to die for! Beware, they are almost too good as you will eat the whole batch!
 


Peanut Butter Bars!
  • 1 1/2 cups gram cracker crumbs
  • 1 lb confectioners sugar (3 - 3.5 cups)
  • 1 1/2 cups peanut
  • 1 cup butter, melted
  • 1 (12 ounce) bag milk chocolate chips
Directions
  1. 1 Combine graham crumbs, sugar and peanut butter and mix well.
  2. 2 Blend in melted butter until well combined.
  3. 3 Press mixture evenly into a 9 x 13 inch pan.
  4. 4 Melt chocolate chips in microwave or in double boiler.
  5. 5 Spread over peanut butter mixture.
  6. 6 Chill until just set and cut into bars (these are very hard to cut if the chocolate gets "rock hard".

Oven "Fried"Chicken Chimichangas

 
 Oven "Fried"Chicken Chimichangas
 
  • 2/3 cup picante sauce or salsa
  • 1 teaspoon cumin 
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1 1/2 cups cooked chicken, chopped
  • 1 cup shredded cheddar cheese
  • green onions, chopped with some tops (about 1/4 cup)
  • 6 (8 inch) flour tortillas
  • 2 tablespoons butter or margarine, melted 
  • I use extra green onion, salsa, sour cream, cheese, and lettuce for garnish as well
Directions:
  1. 1 Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions.
  2. 2 Place about 1/4 cup of the chicken mixture in the center of each tortilla.
  3. 3 Fold opposite sides over filling.
  4. 4 Roll up from bottom and place seam-side down on a baking sheet.
  5. 5 Brush with melted margarine.
  6. 6 Bake at 400°F for 25 minutes or until golden.
  7. 7 Garnish with additional cheese and green onion and serve salsa on the side.

My Poor Lil Boo Is Sick!


So sad, just laying on the couch moaning. Has a 100.5 fever. I know, you would think I would be over there with him right now. But, no he wants to be left alone! Just hanging out with my beautiful boys! What could be better? Keep in mind, trying to get a good pic is extremely hard with 2 babies, shoot the oldest is just as bad! LOL I put them on the bed, and turned on the T.V. to get them to at least stay somewhat in place.

What Is A Snow Day Without Hot Chocolate?!

Here is a good recipe for some quality Hot Chocolate! Yumm! Much better than the lil packets you buy in the store!

HOT CHOCOLATE

    * 2 tablespoons sugar
    * 2 teaspoons cocoa
    * 1 dash salt
    * 1 cup milk
    * 1/4 teaspoon vanilla extract

Directions:

   1. 1 Add sugar, cocoa and salt into a large cup.
   2. 2 Heat milk in microwave on high for 1 minute or until hot.
   3. 3 Pour milk into cocoa mixture; stir.
   4. 4 Stir in vanilla.

Good Morning!


This morning I am up early (early for me anyway). My baby has gotten used to taking a nap in the evening and wakeing up at 10pm then staying up until 2:30am or so, and getting up in the morning around 8:30 (that is in addition to his waking up in the middle of all that to eat). But no worries he goes back to sleep when my toddler gets up! UGH! I do have so me relief today though! My 11yr old is off school due to the ice storm! Whoot! I am going to have him earn some extra computer time today by watching his brother while mommy sleeps. :) Speaking of ice storm, my sister in law was stuck in traffic for 7.5 HRS!!!!!! She ran out of gas and had to flag a tow truck driver down to pay $100 for only $10 in gas. She also had to pee and had her 2 small dogs in the car with her. It was quite the ordeal for her and we couldnt even help her because she was at a dead stop (there was no way to get to her) on HWY 70. The roads were so bad that she saw aprox 15 - 20 cars off the road between 4 exits on the highway. I am just thankful she made it home okay. My husband took about an hour and a half to get home from a 35 min drive. But he is considered lucky in this case!

Snow or ice day from school .... I remember the feeling when I saw my school dist called off for the day. One good thing about snow days is seeing my junior high student jump around when he finds out he has no school. So today will be a day of watching too much t.v., playing too much x-box, playing too much computer and eating too much junk. Every kid has to have a day like that every once in a while! And I am happy to have a little extra help and some good company from my son. I think I am just as excited when he gets called off school! lol Today should be a good day! Lets just pray I can live through my toddler's constant screams! We are in the scream phase right now. Happy... scream, mad.....scream, no reason.... scream! I think he likes how he sounds. I have a rule in my house and that is to ignore it, act like it never happened and hopefully it will cut this phase short. When I say scream I mean your eardrums shake, it is so high pitched and excruciating that you want to just lock yourself in your room and never come out! Oh the joys of children! :)

WHITE CHOCOLATE MARTINI   
    

    * 1 ounce white chocolate liqueur
    * 1 ounce vanilla vodka
    * finely shaved dark chocolate


Directions:

Prep Time: 3 mins  Total Time: 3 mins

   1. Pour liqueur and vodka into a shaker filled with ice. If you wrap a towel around the shaker it will        make the drink colder. Shake vigorously.
   2. Sprinkle dark chocolate shavings on top and pour into 2 martini glasses.
   3. This should make 2 drinks but I shamelessly drink the whole thing myself.

Really? You Lost My Can Opener?

I am innocent.....

I just went and bought some more of those child proof locks I blogged about not long ago. But not soon enough! My little twerp lost my can opener! I have looked high and low and cannot find that darn thing anywhere! I guess it is his way of saying he only wants fresh foods...Ha yeah right! He lives on cheese dogs, french fries, yogurt, and V8 Fusion Juice. Thank god for Flinstone Vitamins!

What To Bring To That Holiday Party..... Yum!

I wanted to re post this since the holiday parties have arrived. I also added an appetizer to the mix. Enjoy these are super easy recipes!

Appetizer


Party Meatballs


1 regular size jar of Grape Jelly
1 12oz bottle of Heintz Chili Sauce
1 2lb bag of frozen pre-cooked meatballs

Put everything in crock pot and let cook. Will be done when meatballs are no longer cold/frozen. Ta Da! It's that easy!

Beverage

Frozen Whiskey Sour (Slush) - Bring life to the party!

1 1/2 c. Bourbon
1 lg. can frozen orange juice
1 lg. can frozen lemonade
7 1/2 c. water
1 c. brewed tea
1 c. sugar


 Combine all ingredients. Put in large plastic pitcher and freeze. Stir occasionally to break up. Best to make about 24 hours ahead.

Side Dish


Potato Yummy - Always a favorite!


1 bag of frozen Southern Style Hash browns   
1 bag (2c) shredded mild cheddar cheese         
1 16oz cont. sour cream                                     
 1 can cream of celery
2 cups corn flakes
2 tbsp butter

Preheat oven to 400 deg., Mix hash browns, shredded cheese, sour cream, and cream of celery in a big bowl and transfer to 13 x 9 casserole dish. Bake for 45 min. About half way through I usually take out of oven and stir everything up because it is somewhat difficult to do a good job in the beginning. Topping: melt butter and toss with corn flakes, spread evenly on top of casserole and bake for additional 10 min.             

Dessert        

    Apple Crisp - A Classic 


4     medium tart cooking apples, sliced (4 cups)
3/4     cup packed brown sugar
1/2     cup flour
1/2     cup quick-cooking or old-fashioned oats
1/3     cup butter or margarine, softened
3/4     teaspoon ground cinnamon
3/4     teaspoon ground nutmeg






 
Heat oven to 375 Deg. Grease bottom and sides of 8-inch square pan with shortening. Spread apples in pan. In medium bowl, stir remaining ingredients (except ice cream) until well mixed; sprinkle over apples. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with ice cream.

Is this what these wonderful little containers are for? I just thought of this and had to share. Not only does it serve my toddler perfect portions and he can pretty much serve himself but there is little to no waste. What ever they do not eat just pack back in. Snow Day, Play Day



My Boo! His first snow, well at least the first one he is old enough to get out and play in. What a beautiful experience for him.  And always fun for my oldest to build a fort!

The Last Couple Of Days



I am sorry for not posting the last couple of days to anyone who cares (I know you do! LOL).  I had a big family thing with my brothers family and cousin and her friend yesterday which required a lot more hard work than I had expected in the kitchen. I was in the weeds big time. Once again, I am thankful for my husband for pulling me out. He came and helped me with the dinner and although it was served a bit later than planned, it was a great feast! How the hell did my mom always do these things and make it look like a cinch? Like no problem at all? I will have to ask her. A great time was had by all and all in good company!

Once my oldest got home from school today I packed up the boys and off to my bff's house we went! Always a treat to visit. Kids play and adult conversation. Now we are home and kids are exhausted (bonus to visiting friends with children) and I am ready to update everyone on my ever so exciting life.
