This Was My Yesterday


Today was just an ordinary day. Yeah, my son had school called off but he went to his buddy's house to spend the night. I played with my 2yr old and held my happy baby boy (however happy, he is a lot of work). I thought by now I would be better trained to be at home. I go in kicks.... I will have an awesome meal ready for my husband when he gets home, the dishes done, kids ready for baths, house cleaned etc.. Then there is the kick I am just now getting out of... messy house, dishes not done until morning, dinner? forget about it! I just have hubs pick something up for us or throw a pizza in the oven. Oh and he can do the baths too. Is this normal? Or can I not be domesticated? Okay maybe I am exaggerating just a tad but I think I get my point across.  I often feel bad when in the ladder of the two scenario because I just get sick of the same ole same ole routine... day in day out blah blah blah! I dont mean taking care of and playing with my boys. I mean mostly the cooking and cleaning part! I bust my ass all day to pick up after 3 tornadoes and the house still is not as I would like it. Then after all that I get to cook, get full, and feel lazy just in time to clean that up too! And cooking is something I used to enjoy (and still do at the right circumstances ie husband home to watch boys). Any one who says being an at home mother is sooo easy..... KISS MY BOOTY! It is the most challenging of all jobs I have had. But then at the end of the day when the kids are in bed and you have time to reflect on the day I realize it is the BEST of all jobs too! At that time I am proud of what I do. I absolutely LOVE my family! And guess what? My just turned 2 yr old already knows his shapes, colors, #'s and letters and all body parts. How cool it that? And I taught him that! :) That is much better than a paycheck in my opinion!

I have a new guilty pleasure..... I am too cheap to get a smart phone because of the monthly cost on my cell bill so I got an iPod Touch. I am a game playing fool! Addicted to Scrabble and Words With Friends! Oh and FaceTime, way cool! I am totally getting on my oldest sons nerves with FaceTime (he got one for Christmas) I have been calling him on it nonstop! To him it is cool but he is growing up with this rapid technology period. As to me, I am 31yrs old with this stuff making its way to my discovery. Yes, I know, I am a little behind on the times and my son and husband totally make fun of me for it...... ie We are on generation 4 already on the iPhone/iTouch and I am just now discovering how cool they are! lol!

This is how we skate board at our house! Well, in the winter anyway! My husband love how my older son plays with our 2 yr old, it is so inventive.

GROUND BEEF PIZZA CASSEROLE

  • GROUND BEEF PIZZA CASSEROLE
 INGREDIENTS:
 

1 lb lean ground beef or turkey
1 large onion, chopped

1 medium green pepper, chopped

1 tablespoon fresh minced garlic

salt
3 -4 tablespoons Parmesan cheese

1 lb pepperoni, divided

1 (4 ounce) can sliced mushrooms, drained

4 cups pasta sauce

3 -4 cups rigatoni (cooked to firm-tender and drained, do not overcook the pasta)

4 cups mozzarella cheese, divided 


  1. Grease a 13x9-inch baking dish.
  2. Cook the gound beef in a medium skillet with the onions, green peppers, garlic, salt pepper until meat is browned and veggies are tender; drain fat, and mix in the Parmesan cheese.
  3. Stir in the 1/2-pound pepperoni (chop this pepperoni to add to the mixture, leave the remaining half pound pepperoni sliced), mushrooms, pasta sauce; stir well until combined; simmer for 20-25 minutes on top of stove.
  4. Set oven to 350 degrees.
  5.  Place the cooked rigatoni pasta on the bottom of the greased baking dish.
  6. Sprinkle with 2 cups mozzarella cheese over the pasta.
  7.  Layer with pepperoni slices evenly over the cheese.Top with the ground beef/pasta sauce mixture.
  8. Bake uncovered for 30 minutes.
  9.  Remove from oven, sprinkle with the remaining 2 cups mozzarella cheese. Return to oven and bake for 10 minutes longer, or until bubbly.
  10. Let stand for 10-15 minutes before serving.



I am sorry I have not posted in a while. My house has been sick one person right after the other and each on separate occasions each with something a little different. Oldest son, stomach flu for several days with very forceful projectile vomiting -- always a fun one to clean up after! Middle son had high fever for 1 day and mild one for the second day with diarrhea -- this one is also fun to clean up after considering he is only 2! I had a breast infection (breast feeding mother) and got drugs that were not strong enough then the other one got infected too and had to get even stronger drugs! I dont know who has had one but when you get one it feels like you have the flu for 24 - 48 hrs! This was the only time I have had one and I am hoping the last! My husband and the baby are the safe ones..... this time! But I am sure this is the same in most family's at his time because everyone I have talked to has been pretty much in the same situation!
